Ingredients
2 sticks unsalted butter, room temp, save wrappers to grease pan
1.5 cups sugar
1 teaspoon pure vanilla extract
2 xl eggs, room temp
2 cups creamy peanut butter
3 cups all purpose flour + more for dusting pan
1 teaspoon baking powder
1.5 teaspoon kosher salt
1.5 cups rasberry jam
2/3 cups salted peanuts, coursley chopped
Directions
Preheat oven 350
Grease and flour 9 x 13 x 2-inch baking pan
In electric mixer with paddle attachment, cream the butter in sugar at medium speed until light yellow about 2 min
With mixer at low speed add vanilla, eggs, and peanut butter. mix until well combined
In small bowl sift together flour, baking powder, and salt. At slow speed at flour mix to peanut butter mix. Mix until well combined.
Spread two thirds of the dough in preped pan, spread eveningly
Spread jam evenly over the dough.
Drop small globs of remaining dough evenly over jam. Don’t worry if jam isn’t covered.
Sprinkle chopped peanuts and bake for 45 minutes.
